almond peach salad $1.57 recipe/serving
Fruit on a salad is not a new concept but the savory aspect of the balsamic peaches adds a bright flare. Creamy goat cheese and crunchy almonds round out this salad perfectly. I was lucky enough to find goat cheese on sale for $4.99/11 oz. this week and I HAD to take advantage of that steal. Goat cheese is one of my all time favorites!
Almond Peach Salad

STEP 1:Layer the salad ingredients on your plate or bowl in the following sequence: spinach, goat cheese, peaches, almonds.
STEP 2: Delight in how fast, easy and inexpensive good food can be!
NOTE: Goat cheese can be pretty pricey but once in a while I like to pamper myself. If you can find it on sale for a great price like I did ($4.99/11 oz.) then treat yourself! Goat cheese also goes great in scrambled eggs, sandwiches or simply smeared on some crackers with jam or jelly.
