mini key lime pies

Being cheap and bad is oh so good! Every now and then I crave something sweet but I especially don't want to spend a lot when I know it's not good for me anyway. I love this recipe because it is quick, easy, and has automatic portion control! Sure, you could make this from scratch for a fairy low-cost too but hey, time is money!

INGREDIENTS COST
21 oz. can key lime pie filling $2.50
1 pkg of 6 mini graham cracker crusts $1.68
4 oz. (1/2 tub) whipped topping $6.74
total $0.88


STEP 1: Empty the can of pie filling into a large bowl. Carefully fold the whipped topping into the pie filling until the mixture is consistent. Be careful not to over mix because this could cause a loss of air and "fluffiness."

STEP 2: Spoon the mixture into the pie shells, dividing evenly among all six.

STEP 3: Either refrigerate until chilled and then serve or you can freeze them for an ice cream like texture!

STEP 4: If you are freezing the pies (which will make them last longer if you just like dessert every now and then), place them on a flat cookie sheet, uncovered, just until frozen. Once they are frozen, wrap them tightly with plastic wrap and then place all of them inside of a freezer bag.

NOTE: If you are having company or just prefer one large pie, this amount of filling also fills one 9 inch pie shell (which coincidentally cost the same as the six mini shells). You can also make this recipe with pudding in place of the canned pie filling and if you have ever been down the pudding isle, you know the flavor possibilities are endless!! Experiment with different flavors and additions and let me know what you come up with!

    Did these freeze well (maintain the light and fluffy texture after being frozen)? Also, where did you get the Key Lime filling? They do not have this at my local market (Food Lion).

    I know this is a convenience recipe, but replacing just one ingredient with homemade -- the whipped cream -- will reduce the cost but not increase the time spent significantly.
