Sometimes my body just craves green vegetables. This recipe has been my staple lately because it is so quick and delicious. While it is a tad more expensive than usual, this concept can be applied to any other vegetable, including less costly varieties.Simple Kale

NOTE: I used organic kale because that is what was available to me. This recipe may cost you significantly less!

| 1 bunch | fresh kale | $1.99 |
| 1 tsp | chopped garlic | $0.10 |
| 2 Tbsp | olive oil | $0.38 |
| 1 Tbsp | sesame oil | $0.13 |
STEP 1: Trim the stems out of each kale leaf by cutting just along each side of the stem. Chop the remaining leaves into 2 inch sections.
STEP 2: Heat the olive oil in a medium to large skillet over medium heat. Be careful not to turn the heat up too high or else your oil will burn (classic rookie mistake!).
STEP 3: Add the chopped garlic and let it sizzle for one or two minutes. You will notice the garlic changing color. It is time to move onto step 4 when the garlic is just golden brown. If the garlic gets too brown the flavor will change so watch it closely!
STEP 5: Once the kale is nicely wilted you can turn off the heat and sprinkle on the sesame oil and add more salt or pepper if needed.
Once you get the hang of this dish it is so quick and simple. Kale has a nice hearty texture that gives you more to chew on than other greens (spinach, turnip, mustard, etc.). The sesame oil is purely for flavor and if you don't have any the dish is quite good without it as well. Once again, this simple way of preparing vegetables can be used on almost ANY vegetable so give i a try! Test out a new veggie every week! Find what is in season because it will taste the best and be the best price. Now there is no excuse to round out each of your meals with some tasty vegetables :)

I like to eat my rapinis this way (just blanch them for 2-3 minutes in salted water first) it's delicious and full of vitamins!
I think I'll try that with the swiss chard, which is over abundant in my backyard right now.
