cha-cha-ching chili $9.80 recipe / $1.23 serving
This recipe is one of my all time favorites so I thought it should have the honor of being first to the blog! This chili fits budget bites to the T by being insanely good, super satisfying, crazy easy, and under $2 per serving. If you are new to cooking, then give this recipe a shot. All it requires is opening some cans and bottles, dumping them all into a pot and stirring! So, lets get to it!


Total Recipe cost: $9.80
Servings Per Recipe: 8 (approx. 1 cup each)
Cost per serving: $1.23
Prep time: 5 min. Cook time: 20 min. Total: 25 min.
STEP 1: Brown the ground beef in a large pot over medium heat until no pink meat remains. Stir the meat well while it is cooking to break up large chunks and make sure all of it is cooked through.
STEP 2: Add the diced (or roughly chopped if your knife skills are still lacking) yellow onion. Stir and cook until the onion is transparent.
STEP 3: Add the contents of the chili seasoning packet, V8 juice, drained beans, tomatoes (not drained) and the frozen corn. Stir well.
STEP 4: Continue to heat through, stirring occasionally. If the chili is too soupy for your tastes, just continue to let the chili cook and some of the liquid will evaporate. Be sure to stir every once in a while to prevent anything from sticking to the bottom of the pot. Once the chili is nice and hot, it is ready to eat!
Sprinkle a little bit (approx. 1/4 cup shredded) cheddar cheese over the top of your bowl for an added $0.19 per serving!
Notes: This recipe is endlessly adjustable! Use turkey, chicken or tempeh instead of beef. Dice up any vegetables that are in your fridge and add them to the pot (squash and bell peppers go really well). Change up the beans to suit your tastes or just use up what you have on your shelf... do whatever you want, the bottom line is that this chili is delicious and cheap!
To round out this meal try making some corn muffins. A box of mix can usually be bought for less than 50¢. Just add milk (about 17¢/.5 cup) and one egg (about 22¢ ea) and you've got about 6 muffins for under a dollar. The whole meal, chili, muffin and cheese is less than $2! CHA-CHING!
Be sure to immediately freeze any portion that you don't think you will be able to eat within 4-5 days. Then, when you're feelin' in the chili mood again just take it out of the freezer and thaw in the microwave or over low heat in a sauce pan!

The spicy hot V8? What size is the large bottle, 64 oz or 48 oz? Also, are you referring to the little square package of frozen corn?

You can use the spicy hot V8 if you like it extra spicy. I've used it before but I find that if I buy the spicy chili seasoning (because you can usually get either mild or spicy packets) it is hot enough for me.
I usually buy the large 48oz. bottle (you caught me, I was too lazy to look it up when I posted this recipe). If I can find the individual cans (12 oz.) for sale I will just buy two of those so I have no left overs.
I buy the bags of frozen corn. It doesn't matter what size you buy because you can keep the rest frozen. I usually use 1-1.5 cups in the chili. The chili is also quite fantastic without corn!

Make sure you drain the beef after cooking! It will help prevent heartburn as well as reducing calories a lot.

that's the great thing about using 93/7 or 96/4 beef, there is nothing to drain off! :D

Made some chili tonight - thanks for the delicious recipe! I made mine a bit cheaper by using tofu ($1.49/lb at a local dairy bar) instead of the ground beef. Sauteed that in a little vegetable oil before adding the onion and then the rest of the ingredients. My housemate enjoyed it as well!

Made the chili for lunch today, very nice. Recently got laid off, so your blog has been very good to keep the meals on budget, but I've also been having people over to my house for lunch to keep in touch. This was a great dish to serve on a rainy day. I had honestly never made chili for myself before, this was an excellent place to start.
Next time I'm going to work out the chili mix myself instead of buying the packet, and the impulse to buy ground lamb or some other meat was strong, but would have blown the budget.

toep - Is tomato juice or some other basic vegetable juice blend available? Tomato juice won't be quite as full in flavor as vegetable juice, but it will be the closest option.
