kale w/ tomato & feta

Sometimes the best recipes come when you're just sweepin' out your fridge. All three of these items (kale, tomato, feta) were things that I had purchased and not used for one reason or another. Sometimes you just have to scan your fridge and cupboard to see if anything inspires you. You'd be surprised at how many delicious things you can make from the "left over" ingredients in your kitchen. The more you cook, the better you'll get at knowing what works together and before you know it, you'll be creating delicious meals out of what seems like nothing!

This was insanely good, btw. I want to make it again and throw a fried egg on top. ...but then, I like to put a fried egg on just about everything.

INGREDIENTS COST
2 Tbps olive oil $0.22
1 tsp minced garlic $0.12
1 bunch kale $0.99
1 medium tomato $0.67
2 oz. feta cheese $0.87
to taste salt and pepper $0.05
TOTAL $2.92


STEP 1: In a large skillet, cook the garlic in olive oil over medium heat.

STEP 2: While the garlic is cooking, dice the tomato. Add the tomato to the skillet and cook for 3-5 minutes.

STEP 3: While the tomato is cooking, remove the stems from the kale, cut the leaves into chunks and rinse well under cool water.

STEP 4: Add the kale to the skillet and cook until wilted (about 5 minutes). Season with salt and pepper, crumble the feta over top, and serve.

So simple yet so delicious.

olive oil garlic
Add the garlic and olive oil to a large skillet and saute over medium heat for 1-2 minutes.

diced tomato
While the garlic is cooking, dice the tomato.

Add the diced tomato the skillet and saute for a few minutes more.

de-stem kale
While the tomato is cooking, remove the stem from the kale. Sometimes I use a knife to cut down the sides of the stem, sometimes I just tear the leaves away with my hands. After removing the stem, cut the leaves into chunks.

wash kale
Rinse the kale well under cool water to remove any debris stuck to the leaves.

add kale to skillet
Add the kale to the skillet...

saute kale
Saute the kale until it is wilted. Season with salt and pepper to taste.

feta cheese
Crumble the feta cheese over top and serve! ...or add a fried egg on top.

I love the "cleaning out the fridge" recipes. Last night, I made a salad with romaine, tomato, blueberries, leftover steamed green beans and sliced up hard-boiled egg. Tossed it with a little bit of olive oil, sea salt and balsamic. Tasted so fresh and delicious!

Looks great! kale + cheese = <3 in my book!

This is very similar to one of my standby dishes; I like to add a chopped onion with the garlic and top with whatever cheese I have on hand (extra extra old cheddar works well if you've got it). Now you've got me wondering about other flavour combos - I'm going to have to pick up some feta to top it with next time!

This is such a great healthy recipe idea. I could totally see this being made with spinach, but I like that you used kale here. I've never made kale with cheese before, but it's an intriguing combination that I'll have to try next time I make kale.

This really was incredible! I added in some mushrooms with the tomato... I ate the entire batch! If anyone is afraid of greens, I definitely recommend this recipe!
