root beer pulled pork

$13.54 recipe / $1.35 serving
It's highly unusual for me to cook with an ingredient like root beer, but I have to admit, I've been extremely curious about this recipe for quite some time. I love slow cooked pork and I couldn't wrap my head around what type of interesting flavor root beer would add to it, so I had to try it for myself.

I was blown away by the smell that wafted from my slow cooker and gently beckoned me awake in the morning. The flavor was equally amazing. In fact, I liked it so much that I've been eating it without any BBQ sauce at all. It's subtle, complex, and slightly sweet. Perfect.

Plus, I love the fact that it only requires a couple of ingredients. So, for people who are just starting out, this is a really easy introductory recipe. If you want something a little more "from scratch" or all natural, check out my original pulled pork recipe (it's still pretty easy).

The price for this recipe only includes the meat, because you can do about a million things with it. Eat it on a bun or wrap it in a soft, fluffy piece of naan like I did. I even put a little on my egg sandwich this morning for breakfast! It's great for tacos, burritos, or even for extra protein on salads.

Total Recipe cost: $13.54
Servings Per Recipe: 10 (about 3/4 cup meat each)
Cost per serving: $1.35
Prep time: 15 min. Cook time: 8 hrs. Total: 8 hrs. 15 min.

INGREDIENTS COST
5 lbs. bone-in pork roast $9.77
2.5 cups root beer $0.43
28 oz. BBQ sauce (divided) $3.19
1 tsp garlic powder $0.05
1 tsp smoked paprika $0.10
TOTAL $13.54

STEP 1: Place the pork roast in the slow cooker. Stir together 1/2 cup of BBQ sauce and 2.5 cups of root beer. Pour the root beer mix over the pork roast in the slow cooker. Sprinkle the garlic powder and smoked paprika over top.

STEP 2: Secure the lid on the slow cooker and cook on low for eight hours.

STEP 3: After eight hours, use tongs and a slotted spoon to remove the meat and bone from the liquid in the slow cooker (the bones can be discarded). The meat will be extremely tender and should easily separate from the bone.

STEP 4: Shred the meat using a fork and either serve as is or mix in the remaining BBQ sauce.

pork roast
This is the pork roast that I bought. It's labeled a "pork end loin roast." It's pretty lean, and only $1.99/lb. which makes it a pretty good deal. Unwrap the pork roast and place it in your slow cooker. If you want, you can cut it into chunks so that more of it is submerged under the root beer as it cooks.

root beer and BBQ sauce
I wanted the flavor of both the root beer and BBQ sauce to infuse into the meat, so I mixed a little bit of the BBQ sauce into the root beer (1/2 cup BBQ sauce and 2.5 cups of root beer).

add to slow cooker
Pour the root beer mixture over top of the pork roast.

seasoning
For good measure, I sprinkled a little garlic powder and smoked paprika (for extra smokiness) on top. I used about 1 tsp of each.

cooked pork roast
Cook on low for eight hours and then you'll have this! Super tender, moist, pork roast that smells absolutely amazing!

remove meat
Using tongs and a slotted spoon, remove the meat from the slow cooker. It should be so tender that it just falls right off the bone.

pork bones
Speaking of which, the bones can also be remove and discard.

shred meat
Shred the meat and either serve as is, or...

add BBQ sauce
Stir in the remaining BBQ sauce. I actually experimented with combining the BBQ sauce, some of the cooking liquid, and root beer, and then letting it simmer until reduced to a thickened state again. I had hoped that it would add more flavor, but in the end I much preferred the straight BBQ sauce.

Root Beer Pulled Pork
I have to say, the pork is AMAZING on the soft, fluffy naan... but you can also use it a million different ways. I found myself just snacking on it by itself, even!

Could you use beef instead of pork? I wonder if it would be just as good... ;)

What size slow-cooker are you using?

It's either a five or seven quart... the box and size info is long gone so I'm not sure :(

I am new to this whole cooking thing and am searching your websites for all the easier ones. So far i have done the taco chicken bowls (awesome!) over rice and in tortillas for leftovers (even better) and i have done the black bean ques. Very good and still easy. This looks like another that i can pull off! Yay!

Do you have anything for tuna steaks? I just bought some in bulk and not sure what all i can do with them besides just grill them Thoughts?

I am adding this to my list of things I have to try! Thanks Beth, for always having something exciting coming up! My fiance Wayne and I have loved trying your cooking.

For anyone reading the comments, Wayne has just released an android app called "RecipeBox." It is largely based on the desire to have somewhere digital to store recipes found on this site (and a few random other blogs we aren't loyal to)!

We are really excited and wanted to share it with anyone who also has enjoyed Budget Bytes. Here is the link below. Does not currently have download qualities, but is really easy to edit and add recipes on the phone. And its free, so budget friendly :) Our gift back for enjoying this site! Happy cooking everyone!

Silly question maybe, but I still have to ask...

To cut down on the sugar content, would you still be able to get decent results using DIET root beer?

  • At July 12, 2012 at 5:41 PM , Blogger Beth M said...

I wouldn't suggest using diet root beer. I can only imagine that the sugar substitute (whether it's aspartame or splenda) would leave a bad after taste. But, if it makes you feel any better, most of the sugar from the root beer gets left behind when you pull the meat out of the cooking liquid :)

5LB roast too big for a 3.5 qt slow cooker. I left out about half the Barbecue sauce and then a quarter of the liquid. Cut the roast in 4 pieces so I could ensure it got submerged in the liquid.

Reserve some of the cooking liquid for extra moisture/flavor when you pack it away for flavorful leftovers.

i put the 4.75lb-er in my 2.5 qt slow cooker...it's pretty full but does alright. more of the roast is submerged in the liquid, that's for sure...we'll know the results in 8 hours!

I cooked this last weekend and it will be added to the top ten list of the "most delicious" food that I've ever eaten. So easy to make and easy on the wallet too.
Save some of the cooking liquid and use it to moisten your bread or as a sauce to add to your sandwich.
    This recipe is DELISH!!!!

I just put this into my slow cooker! The only roast I could find was about 6.5 pounds, and I only had enough root beer to get 2.5 cups. I added a little bit of coke to it (we'll see how that goes)to adjust the liquid to the bigger roast. I also used a bit more BBQ sauce. My roast is pretty much covered in the liquid, more so than pictured, so hopefully it still turns out well! I'll check it after 8 hours and adjust the cooking time accordingly. Thanks Beth! Can't wait to try it!

The same effect can be achieved in the oven if you have a dutch oven or some other lidded cookware. But, I've never done it so I'm not sure about times and temperatures.

I was really excited to finally get a chance to try out this recipe for the first time and while I did end up with a delicious pulled pork sandwich, I was disappointed with the lack of root beer flavor in mine. It's good but doesn't taste much different from any other pulled pork sandwich I've had. :( Not sure if I did something wrong, followed the recipe except that I used a 3.5lb roast but same amount of liquid.

Molly - Mine didn't have a particularly strong root beer flavor either. The root beer is just kind of a short cut method to ending up with a sweet/savory roast instead of adding a bunch of ingredients :)

I'm also trying it for the first time today. I realized as I was trimming some fat that I have a boneless roast. Hopefully that means I just don't have to pick bones out later, and it won't affect the recipe much. It's also smaller (weight-wise), but there's no bone weight. I used the same amount of liquid, so it's really swimming in there!
