4 WEEKS of GIVEAWAYS
week #2 [CLOSED]
In the continuing celebration of Budget Bytes reaching 10,000 RSS subscribers, I bring you Week #2 of the 4 Weeks of Giveaways!
What do I have for you this week? It's a piece of kitchen equipment that I have absolutely fallen in love with over the past two years - A SLOW COOKER!
Now, I'm not one of those people who likes to cook everything in a slow cooker. In fact, I think most things shouldn't be cooked in one, but there are a few things that it does very, very well. Anytime something requires a long, slow cooking process, the slow cooker is your pal. You can literally "set it and forget it." I love making slow cooked meats, like pulled pork or the infamous taco chicken bowls, but it's also great for beans or slow cooked sauces. Just being able to stock your freezer with freshly cooked beans instead of having to buy canned beans makes this appliance well worth it's weight in gold.
If you haven't started experimenting with a slow cooker yet, I hope this inspires you to!

This week's contest entry question is:
After having too much fun this past weekend, my throat decided to swell up to the size of a soft ball (or so it felt) and all I want is some Super Ramen Bowls. Or, if I wasn't so exhausted, I'd go get myself a bowl of pho. So, those are my two sickness soother foods, what are yours?
HOW TO ENTER:

I've never used a slow-cooker, but beans are definitely my comfort go-to food, and everyone always says there's nothing better than coming home after a long, cold day to an all-day-simmered pot of fresh beans. Also, overnight oatmeal! That's something I could really get behind.

My favorite comfort food is this really thick beef stew, minus the potatoes. Then I make penne pasta and put the stew over the pasta. So good, so yummy, so soothing.

My mom's chicken soup, that starts right from a whole chicken, stock vegetables, and oxtails, and has celery, carrots, onions, leeks, and little meatballs in it. That paired with fresh bread and I feel safer, better, and warmer. (Her recipe makes a ton and freezes like a dream, so I make it when I know I'm low, and have it whenever I need it)

Eating food when I'm sick sometimes makes me hate it for life if it, uh, "returns," so I usually stick to liquids. I do, however, recall some restorative mashed potatoes my husband made me when I was sick one time.

It takes a hecka-long time, but my go-to under the weather food is King Ranch Chicken. I simmer a whole fryer chicken to makes it, and stick it in a huge casserole pan. It usually makes about 8 pounds haha, but it's delicious and fattening and I can eat on it for about a week :P

Chicken and rice! Saute onion and garlic, throw in some rice to coat. add chicken stock, put in a casserole dish, and cover with drumsticks and thighs. spice with paprika, salt and pep and throw it in the oven at 350 for at least an hour.
SO GOOD. the rice soaks up all the chicken fat and is delicious. perfect for colds or just cold days.
