Sorry about the sporadic posts lately, folks. I've been in the "process" of moving for a couple of weeks now which means living out of boxes and trying not to keep any perishables. I finally made the big move yesterday but I still have no gas (read: no fire) and no refrigerator. I was supposed to get internet today but there was a glitch there too. Anyway, I should have my kitchen up and running and internet to post some recipes by next weekend. I have not forgotten the blog! I look forward to cooking and sharing again soon!

In the mean time, what should be the first thing that I cook in my new apartment? Suggestions welcome!

    Good luck with your move. I don't necessarily have a suggestion, although the above one of chicken lasagna sounds delicious, I did want to tell you that last weekend I went to the grocery store and bought $50 worth of ingrediants to make several of your meals for the week. I've made the Grilled Pesto Chicken - DELICIOUS! I made the Lemon Parsley Pasta - It was good, but I need to perfect my cooking garlic cloves technique, mine burnt. Tuna Pasta Salad w/ Peas - Yummy! Have a ton for left overs! And just this morning I made the Chili Garlic Breakfast Quesadilla - which was SOOO GOOD! I used salsa instead of chili garlic sauce because I went to 2 different stores and couldn't find it. It was still good. And next...(probably tonight) I'm making your light summer version of Potato Salad and tomorrow will be the Grilled Vegetable Pasta Salad. Can't wait! Thank you so much for inspiring me to cook!!!! You make it easy!

    I think you should make yourself a celebratory meal - why not? Perhaps a fancier meal, just done on a budget? Hope you feel settled soon.

    You should make something perfect for this heat! After a long hot day its nice to make something cool and refreshing but I dont know what that means other than salad.

    Does coffee count as cooking? That'd be my first item with all you have to fit in!

    Great suggestions everyone!! I did in fact make coffee this morning (using the microwave to boil water and my french press). I do plan on making A LOT of bread soon... I may go on a pizza making extravaganza, dough and all, when the gas and refrigerator get hooked up. I love pizza and it's just been too long since I've had it! I get internet Monday (hopefully) so we'll get the ball back rolling soon!

    Take your time with the moving of stuffs - I just finished moving, totally overdid it, and am still paying for it with aches and pains, haha!

    I say you should make whatever you feel like, once you're all settled in, but that's just me.

    Also, I've never commented before (since I just found out about your blog recently), but I have to say that your Caribbean Jerk Chicken recipe and your Sweet Chili Shrimp recipe have been lifesavers since I moved in :D And your Pork and Pineapple burritos work pretty well with ground beef too!

    I just did the moving thing (Tucson to Atlanta. Both hot, but I like the Atlanta hot better!)

    With the steamy heat and the kitchen stuff barely unpacked, my first meal in the new place was very basic: scrambled eggs. The second one was a big pot of black beans so I could have beans and rice (and all kinds of other excellent bean dishes).

    I'm planning a gazpacho for next weekend if I can find good tomatoes - that plus a half sandwich or a hardboiled egg makes for an excellent lunch, and I can take it into work all week long.

    If you aren't totally set up yet - I suggest some sort of kitchen-less meal. Like something that can be done in a microwave or a hot plate, or electric kettle.

    Eat my new favorite sandwich: two slices of pumpernickel spread with cream cheese, sprinkled with garlic powder, salt, and two layers of sliced cucumber.

    If you're going to experiment with breads soon, I recommend you also make some sort of fun panzanella with your leftover stale bread! It's summer time, who wants to turn the oven on AGAIN? Glad the move went well.

    I would love to see your spin on carbonara, I am new to your site so if you have already done that than do grilled cheese :-) Good luck on your unpacking.
