chocolate banana baked oatmeal

$3.59 recipe / $0.60 serving
Do you have a hard time getting your kids/spouse/significan other out of bed in the morning? Just pop a batch of this in the oven and problem solved! About 20 minutes into baking this your house will be filled with the smell of hot, chocolatey BROWNIES!

Does it taste like brownies? Not exactly, but it sure did cure my chocolate craving (a very rare occurrence for me). Brownies are loaded with sugar, butter, and eggs, whereas this recipe only has a 1/3 cup of sugar, two eggs, and no butter. It is breakfast, after all. Think of this as brownie's lighter, healthier, more meal-like cousin.

If you *do* prefer a more brownie like oatmeal dish, you can up the sugar to 1/2 cup (this is still only about 1.5 Tbsp per serving), use whole milk, and maybe add in a little melted butter before baking. Since I'm not very into sweets in the first place, I made mine simple and light. It still had tons of chocolatey-ness, but I didn't feel like I had just stuffed myself on dessert. That's a win-win for me!

Other fun add-ins that you can try: coconut, walnuts, almonds, peanut butter (heat it in the microwave and stir it in), marshmallows, or even chocolate chips. I have no doubt that I'll be experimenting more with this in the future! :D

Total Recipe cost: $3.59
Servings Per Recipe: 6
Cost per serving: $0.60
Prep time: 10 min. Cook time: 45 min. Total: 55 min.

INGREDIENTS COST
3-4 large bananas $1.29
2 large eggs $0.32
1/2 cup unsweetened cocoa powder $0.32
1/3 cup brown sugar $0.11
1 tsp vanilla extract $0.28
1/2 tsp salt $0.05
1/2 tsp baking soda $0.02
1/2 tsp baking powder $0.02
2 cups milk $0.75
2.5 cups old-fashioned oats $0.43
TOTAL $3.59

STEP 1: Preheat the oven to 350 degrees. In a medium bowl, mash 1.5 cups of bananas (about 3 large or 4 medium bananas).

STEP 2: Combine the mashed bananas with the eggs, cocoa powder, brown sugar, vanilla extract, salt, baking soda, and baking powder. Whisk together until smooth. Add the milk and whisk again. Make sure there are no clumps of cocoa powder.

STEP 3: Stir the oats into the milk/chocolate/egg mixture. Coat the inside of an 8x8 inch casserole dish or large pie pan with non-stick spray. Pour the oat mixture into the pan. Slice the last banana and place the slices over top of the oat mixture (this is an optional garnish).

STEP 4: Place the oats in the oven and bake for about 45 minutes. Cut into 6 pieces and serve warm.

Step By Step Photos

mash bananas
Preheat the oven to 350 degrees. Mash 3 large bananas (or 4 medium) so that you have about 1.5 cups total after being mashed. I just mash mine right in my liquid measuring cup so I can see how much I have and add more as needed.

other ingredients
Put the mashed bananas into a bowl and add the eggs, brown sugar, cocoa powder, vanilla extract, salt, baking powder, and baking soda.

brownie mix
Whisk it all together until smooth. It seriously looks like brownie mix at this point!

add milk
Next whisk in the milk. Make sure there are no clumps of cocoa powder.

add oats
Lastly, stir in the old-fashioned rolled oats.

ready to bake
Coat the inside of a casserole dish (8x8 inch or a large pie dish) with non-stick spray. Pour in the oat mixture. Slice the last banana and carefully place the slices on top. This is really just a garnish and therefore optional. They look nice right after baking but get a little not-so-pretty after a couple days of refrigeration (FYI).

chocolate banana baked oatmeal
Bake the oatmeal for 45 minutes or until the center is slightly puffed up and no longer liquidy. It sure looks and smells like a big huge brownie when it's finished!

I like to pour milk over mine but it would be amazing with vanilla soy milk or vanilla yogurt! Yeah... I think I'm going to have to make a rocky road version! Peanuts, chocolate, and marshmallows - YEAH!

Any idea what effect using quick oats might have?

Allison - It will probably be less "textured" and more gooey. But chocolate goes nicely with gooey, right? ;)

Could you make it in a muffin tin and then freeze it you think? Put a couple.of the picks of oatmeal in some milk and microwave it? For those of us who live alone?

I love the muffin tin idea! It will probably bake faster in a muffin tin, too. Or, if you don't have a muffin tin, you can just divide it up into containers after it bakes and freeze it that way :)

It should be illegal to be able to have this for breakfast! I think I might try making this in muffin tins like Anonymous said, that way I won't be tempted to eat the whole dish myself and ruin my "diet" to get ready for summer.

This looks really good but was wondering why you had the pictures of the Hershey Bars in the picture? Those have to be the worst examples of 'chocolate' that I can imagine. More like flavored vegetable fat. Does anyone still eat them?

Ashlea - I think that will work. I'm pretty sure that other readers have done this with the other baked oatmeals and had success. :)

I wonder how feasible this would be with steel cut oats, but I worry experiments would just be disastrous, haha.

This looks so good, though, I'm considering getting some traditional oats just so I can make some of this sometimes.

I wonder if you could go a step farther to make it healthier and use Slenda or Truvia instead of sugar and the splenda brown sugar blend instead of the real brown sugar?

  • At April 18, 2012 at 3:56 PM , Blogger Beth M said...

Anon - I'm sure you could! The sugar doesn't play a major chemical role in this recipe, just flavor, so I'm sure that would be fine :)

Hmmm I guess I was expecting it to be more of a granola-like texture (I guess the milk picture looked like that to me?) but it was really soft and the oats had an almost soggy texture. I wonder if I bake it for longer or higher if it would be less...moist?

  • At April 23, 2012 at 5:30 AM , Blogger Beth M said...

Danielle - No, it's definitely not like granola, but more firm than traditional oats... it's almost like an oat cake? The pieces jutting out in the picture were from the edges. They weren't crispy, but held their shape. If you do bake it longer, it should get more firm and less gooey.

Made this last night according to the recipe and unfortunately it did not have much flavor - Maybe I'll try increasing the sugar as recommended or substituting Splenda.

Just made this today. Ate one piece now and froze the rest in individual pieces to bring to work later this week. It was very good. If you have made baked oatmeal before, the texture is very similar - like an oatmeal cake almost. The chocolate flavor is very subtle which I like. This will be in rotation of my bake oatmeal recipes for work - I warm it up at work and add milk. Thanks!

Made this today- half of the recipe has the chocolate, the other half has 1.5 tbsp peanut butter (for half the recipe) because my hubby doesn't like chocolate! Let me tell you, the PB & banana is a great combo, too. I divided them into 18 muffins (9 of each). We think this is genius. Maybe we can even get away with making it a dessert, and serve it with vanilla ice cream...

Made a few changes as I didn't have any baking soda so I left that out and I wanted a tad bit more banana flavor so I added 1/4 tsp of banana extract. It was DELICIOUS! Glad I found this blog on Pinterest! Thanks for the great recipes!

I made this last night and I'm undecided as to whether I liked it. I had made the lemon raspberry one last week and found it rather light but this one was very heavy, probably because of all the banana. I added coconut and almonds and then melted some peanut butter, but that was only stirred through a quarter of it.

I imagine this is really healthy though!

I am so excited to try this recipe! I love oatmeal and am always looking for different recipes. I calculated the calories too, and if you use light soy milk, it comes out to only 277 calories/serving! Delicious and healthy!

Had some extra bananas so I decided to make this. Couldn't wait for it to cool so I am having it hot. I only had quick oats so I used less almond milk by about 1/4c. Like it a little sweeter so I added about 2 tbsp. sugar free french vanilla creamer over the top of my helping and it is delish!! Will definitely be making this again!! 5.5 WW points plus

I'm not sure if I'm doing something wrong buuuuut I've baked it about 40 minutes over what it should have been and it's still not done. It's really gooey on the inside. Anyone else have this problem or did I just make a mistake?

  • At January 28, 2013 at 4:53 PM , Blogger Beth M said...

Anon - It will still be soft and moist, just bake it to the point where it's not super sticky on top. It's kind of like an oatmeal custard. Some people have misinterpreted the pictures and thought that it should be crispy, but it's not at all. I hope you like it anyway!

Drew - Yes, you can, but the end product might be a little more dense. It won't affect the flavor, though!

I made these last week, using quick oats as I didn't have old fashioned. It produced a lot more than I expected, and was denser than I expected. My hubby was the only one who wasn't a fan, but he's not an oatmeal person to begin with. My girls, who surprisingly already like regular oatmeal "porridge", were over the moon with this chocolate version. Definitely a keeper. I will probably try another reviewer's suggestion and use peanut butter next time :)
